Biografi

My research focuses on advancing innovative food processing technologies utilizing local resources from the marine, fisheries, and agricultural sectors to support the development of sustainable and value-added food systems. Growing up in a country with abundant biodiversity like Indonesia, I am particularly motivated to address critical challenges such as limited food diversification, post-harvest losses, and the underutilization of local raw materials. My work aims to transform these challenges into opportunities through science-driven and application-oriented approaches.

Profil Milka Putri

  • I am especially interested in the integration of conventional and emerging food processing technologies, including fermentation, drying, and process engineering, to enhance the nutritional quality, functional properties, and shelf life of food products. My research also emphasizes the optimization of processing parameters—such as temperature, moisture content, and processing time—to ensure efficiency, product consistency, and scalability. In parallel, I explore the valorization of underutilized biomass and agro-industrial by-products within a circular bioeconomy framework, contributing to zero-waste and environmentally sustainable production systems.
  • A central aspect of my research is the development of innovative, functional food products derived from local ingredients, including fish, seaweed, tubers, and non-soy legumes. I am particularly interested in improving protein bioavailability, studying food matrix interactions, and enhancing consumer acceptance through sensory-driven product design. My previous work includes the development of hybrid food products such as fish–tempeh-based formulations, which demonstrate potential in addressing nutritional challenges such as protein deficiency and stunting.
  • Looking forward, I aim to expand my research into precision food processing, digital monitoring systems, and data-driven optimization techniques, including the application of machine learning to predict product quality and process outcomes. I am also interested in bridging laboratory-scale innovations with industrial applications, particularly for small and medium enterprises, to ensure broader societal impact.
  • Through interdisciplinary collaboration and global research engagement, I aspire to contribute to the advancement of sustainable food systems, strengthen food security, and promote inclusive innovation. I believe that integrating local resource potential with cutting-edge technology can play a significant role in addressing both national and global food challenges.
